
This vegan baked ziti is old school comfort food- it is really pretty easy to make with only about 20 minutes of actual prep time. I use the tofu ricotta for lots of other recipes including lasagna (not stuffed shells- that needs a bit more finesse). This makes a big pan so good for meal prep lunches/dinners throughout the week.
