Recipe:

635g bread flour

1 packet (7g) instant yeast

115g organic sugar

1 tsp cinnamon

1 tsp allspice

1/4 cup high quality chai

1/4 cup cocoa powder

75g unsalted dairy free butter, melted

435ml plant based milk, warmed (about 90-110F)

1 flax egg

1/4 cup fresh orange zest

75g dairy free chocolate chips

75g golden raisins, soaked

Piping mixture —

100g bread flour

50g organic sugar

80ml water

Glaze —

110g organic sugar

60ml water

  1. In a large mixing bowl, add yeast, sugar, flour, spices, and cocoa powder. Whisk to combine.

  2. Add milk, butter, flax egg, and orange zest. Whisk to combine again until dough forms. Knead by hand for 7-10 mins or with a dough hook on a stand mixer for 5-7 mins.

  3. Place in a lightly oiled bowl and proof until doubled in a warm area, about 1 hr.

  4. Punch dough down. Add raisins and chocolate chips. Incorporate into dough with hands or stand mixer.

  5. Divide into 4 oz pieces then shape into balls. Place in a greased 9”x13” baking pan. Cover and let rise again, about 30-45 mins.

  6. Preheat oven to 350F halfway into proofing. When dough is puffy and touching, put in oven.

  7. Make piping mixture; combine flour, water, and sugar then add to a piping bag. Pipe crosses on buns.

  8. Bake for 30-35 minutes. While baking, make glaze. Add sugar and water to a pan, heat and stir until sugar is dissolved.

  9. Remove buns and brush with glaze then serve when cooled to warm.
