Damn, my family had a water buffalo in Vietnam for years and years, she was the sweetest girl who just wanted to plow the rice fields and rest in her little paddy after a long day’s work. She would let me sit on top of her as a kid and swat flies from her with a branch lol. I truly love water buffalo and never considered them as a potential food source. Anecdotal story aside, that dish looks pretty good.
