Pabellón criollo is Venezuela’s national dish, symbolizing the fusion of cultures through its colors and flavors. It consists of white rice (white), shredded beef (brown/red), black beans (black), and slices of fried ripe plantain (golden brown). It is a delicious, nutritious dish steeped in tradition, often served with shredded cheese *The Colombian version includes a fried egg*
Preparation:
Black beans: Soak the black beans overnight. Cook them in salted water until tender (approx. 1–2 hours). Sauté onion, garlic, and paprika, add to the black beans, and cook for another 15 minutes until the sauce thickens.
Shredded Beef: Boil the flank steak until tender (1–2 hours). Let cool and shred. Sauté garlic, onion, bell pepper, and processed tomato. Add the shredded beef, cumin, salt, and a little of the cooking broth. Simmer for 30 minutes.
Rice and Plantain Slices: Prepare traditional white rice. Cut the plantains into diagonal slices and fry them in hot oil until golden brown.
Plating: Serve a portion of each ingredient separately on the plate
