I used to be so scared of carbs so my breakfast was eggs, egg whites, mushrooms, cottage cheese and Greek yogurt for many years. For the past 10 months I’ve swapped it out for this: Ezekiel toast, quarter avocado, arugula, grilled tempeh, tahini amino sauce, pickled beats, tofu cubes with nutritional yeast/aminos and a green smoothie (frozen cauliflower/banana/pineapple, spinach, mint, coconut water, ginger).

I feel great. I do this for breakfast, big salad for lunch, and soup for dinner with veggie/fruit plates for snacks. I always focused on low carb so thus lots of eggs, cottage cheese, yogurt and felt run down/tired. Probably not getting as much protein as I used to but feel good and bloodwork is stellar so that’s what matters. It’s a lot of food prep effort but happy i made the switch.
