Crispy Zucchini Roll Skewers (with ham, cheese & potato filling) – super crispy outside, creamy inside

    🧾 Ingredients

    **For the rolls:**

    * 1 large zucchini (or 2 small), sliced lengthwise
    * 9 strips cheese (mozzarella or gouda work great)
    * 9 strips ham
    * 2 eggs, beaten
    * Flour (for coating)
    * Panko breadcrumbs

    **For the filling:**

    * 2 medium potatoes, boiled & mashed
    * 2 tbsp parsley, chopped
    * 2–3 slices bacon, cooked and diced
    * Salt (to taste)
    * ½ tsp garlic powder
    * ½ tsp paprika

    # 👨‍🍳 Steps

    1. **Slice the zucchini** Cut into thin strips (not too thin or they’ll break).
    2. **Bread them** Coat each strip in flour → dip in egg → cover in panko. Set aside.
    3. **Prep fillings** Cut cheese and ham into strips that fit the zucchini.
    4. **Make the potato mix** Combine mashed potatoes + bacon + parsley + spices. Mix well.
    5. **Assemble** Lay a zucchini strip flat → add ham + cheese → spread a thin layer of potato mix → roll it up.
    6. **Skewer them** Place about 3 rolls per skewer to keep them secure.
    7. **Bake** 180°C (350°F) for about 20 minutes until golden and crispy.
