Shrimp (125g of a larger batch I made on Sunday) 132 cals, steamed broccoli (144g with teeny drizzle of shrimp sauce that I thought would be more useful, here lol) 32 cals, & 4 root vegetable cakes 213 cals (they’re like pancakes with mashed potato inside and they’re *divine*).
I just threw stuff together for the shrimp but here’s the recipe for the root vegetable cakes if anyone wants it:

Changes: I used 1/2 cup of Parmesan and 3 tbsp of nutritional yeast in place of the cheddar. I also added a finely chopped bunch of parsley and 3 green onions. I used avocado spray at first but quickly realized they didn’t need it with the pan I was using.
I made the following mash specifically to use in the recipe above: 1 lb Yukon gold potatoes, 1/2 lb turnip, 1/2 rutabaga, 1/2 lb celery root & 1/2 lb parsnip. Store overnight in the fridge before mixing the batter for the cakes.
Once the batter is mixed, I used a cookie scoop to portion it out onto the hot griddle and used the back of a spoon to gently pat them into discs. Cook like pancakes.
