Spent all day prepping food for the week but took the time to make salsa verde from scratch and whip up some arroz rojo. Beans are canned but simmered with peppers and spices.

This is my first time using Butler’s soy curls. I get why folks like them so much now. I’ve been chasing that texture in seitan shreds for a while. I may be investing in a 12lb box for food storage because I’m lazy and don’t want to make seitan all the time.
