    I made this Tbilisi salad recently and didn’t expect it to be this good. It’s super fresh, crunchy, slightly sweet from the pomegranate, and has that nice nutty flavor from walnuts. I added beef, but it works great without it too.

    It’s one of those salads that actually feels filling and satisfying, not just a side dish.

    **Ingredients:**

    * 1 cup cooked beef (thinly sliced, optional)
    * 1 cup cooked and drained beans (kidney or white beans)
    * 1 cup pomegranate seeds
    * ½ cup walnuts (chopped)
    * 1 red bell pepper
    * 1 green bell pepper
    * 1 yellow bell pepper
    * ½ cup fresh parsley (chopped)
    * ½ cup fresh cilantro (chopped)
    * 2 cloves garlic (minced)
    * Juice of 1 lemon
    * 3 tbsp olive oil
    * Salt & black pepper to taste

    **Steps:**

    1. Wash and cut the bell peppers into thin strips or small cubes.
    2. Chop the walnuts, herbs, and garlic.
    3. Add peppers, beans, pomegranate seeds, walnuts, herbs, garlic, and beef to a large bowl.
    4. Squeeze fresh lemon juice over everything and drizzle with olive oil.
    5. Season with salt and pepper.
    6. Mix well until everything is evenly coated.

    That’s it – super simple but really flavorful. Definitely making it again.
