    283 calories includes everything on the plate

    to make: Microwave a potato for a few minutes. Then halve and scoop it out (a melon baller works well for this). Put in the oven to bake and crisp. When it looks browned on the edges bring it out and add in cooked Gardein beefless crumbles, vegan cheese and put back in to melt cheese. When ready top with pico de gallo (chopped tomato, onion, lime juice, scallions, cilantro, salt).

    edit – I salted the beefless crumbles. Also salted the potato.

    How can you eat the vegan cheese? It tasted like cardboard and didn’t melt for me. Do you get use to it or did you like it from the start?
