For those interested, judgement of the quality of the francesinha by Portuguese locals comes down to the sauce. Made with all sorts, but you’re likely to have beer, whiskey and Port wine in it. The best francesinha chefs keep their exact sauce recipes secret. We occasionally manage to bring a litre of it back from our favourite place in Portugal to put in the freezer until our next outing. You can buy a basic francesinha sauce in Portuguese shops in the uk, but it won’t cut the mustard for the initiated until you build it up with extra ingredients.
Also, typically you would serve it with a fried egg on top, and round the outside of the plate would be covered in chips which soak up the sauce. Absolute heaven, but about 2000 calories a go 😍

I’ve tried the francesinha several times in Portugal and found them oddly dry underneath the sauce. Bifana are by far the superior Portuguese sandwich in my opinion.
