The Drill:

  1. Prep the spuds: Peel and cube your potatoes (about 250g). Boil them for 6-7 mins until they’re tender. Drain 'em.

  2. Mushrooms next: Get 350g of cremini/white mushrooms, cut into quarters. Throw them in a hot pan with olive oil and a pinch of salt until they get some color.

  3. Get that crunch: Toss the boiled potatoes into the pan with the mushrooms. Let them fry until they’re golden and crispy on the outside.

  4. The aromatics: Add 3 sliced garlic cloves and a handful of chopped parsley. Give it a quick toss for a minute—don't let the garlic burn!

  5. Finish: Hit it with more sea salt and some cracked black pepper.

I served mine with toasted baguette and it was perfect.
