My written recipe:
Vegan Chocolate Chip Muffins (Makes 12 large/24 small)
Ingredients:
3 cups (375g) Self-Raising Flour,
1 cup (200g) Sugar,
1/2 tsp Salt,
2 cups (500ml) Plant Milk,
1/2 cup Vegan Butter (melted) or Vegetable Oil,
1 tsp (5ml) Vanilla Extract,
1 cup Vegan Chocolate Chips (Reserve 2 tbsp to decorate),
Method:
1. Preheat oven to 190C or 375F.
2. Combine the dry ingredients in bowl, create a well in the centre.
3. Add the wet ingredients and stir to form a smooth batter (whisk if there are lumps).
4. Fold in the chocolate chips.
5. Spoon mixture into lined/greased muffin trays (24 small holes or 12 large). Fill 3/4 full.
6. Decorate with a few extra chocolate chips on top of each muffin.
7. Bake for 20-25 minutes or until golden on top. Rotating the trays 180° and from the top rack to the bottom rack after 15 minutes.
8. Allow to cool fully and then store in an airtight container, enjoy!
