    Looks delicious and on point!
If it doesn’t smell or feel off and reached proper weight loss give it a try!
Congrats on the first go of it!

I’ve made several and this looks good to me, I did notice a little shine to the meat, I don’t know what percentage weight loss you went for but I’m guessing 35%, if so I would shoot for 40% next time but otherwise I think it looks and probably will taste great.

For the mold/outside look point of view it looks about perfect.

But how much weight dif you lose and how long did you let it hang and what temperature?

  5. I only see the core as a softer than other parts.
If you are not sure, toast the slices lightly
