
One of my favorite meals lately, it's filling enough to be a full lunch or dinner.
Ingredients (1 large bowl)
- Mixed greens as the base
- ½–¾ cup chickpeas, drained and rinsed
- ½–1 avocado, diced or sliced
- 1–2 medium carrots, shredded or julienned
- ½–1 cucumber, sliced or diced
- Frozen sweet potato croutons air fried until crispy
- A handful of turmeric seasoned almonds for crunch
Maple mustard dressing
- Dijon or yellow mustard
- Maple syrup to taste
- Splash of apple cider vinegar or lemon juice
- Garlic powder, salt and pepper
- A little oil if you want it creamier
- Whisk everything together until smooth and adjust to taste
Instructions
- Prep your veggies, slice cucumber, dice avocado, shred carrots
- Add greens to a large bowl
- Top with chickpeas, avocado, carrots and cucumber
- Scatter the sweet potato croutons and turmeric almonds on top
- Drizzle the dressing over everything, toss lightly and enjoy!
