My partner had an anaphylactic dairy allergy, and adapting or creating safe recipes for him is one of my favorite hobbies. This weekend, I made a dairy-allergy-safe chocolate creme pie for a pi day party and competition and I won the Dairy-Free category, and was runner up for Best in Show!!   1. I wanted to use the full cans of coconut milk and sweetened condensed milk, so the following recipe makes 2 pies!!

    **Crust**
    – 2 Store Bought dairy-free graham cracker crusts
    – 1 egg
    – 1/4 cup enjoy life semisweet chocolate chips

    > *Baste the graham cracker crusts with one beaten egg so they brown nicely and add more structure. Pre-bake the crusts per instructions. Melt chocolate chips and spread thin layer onto crust after pre-baking.*

    **Chocolate Filling**
    – 1 can coconut milk (full fat unsweetened)
    – 1 can sweetened condensed coconut milk
    – 8 tablespoons Dutch cocoa powder
    – 3 cups enjoy life Semisweet chocolate chips
    – 4 tablespoons cornstarch
    – 1/2 cup Oat Milk
    – 2 teaspoon vanilla
    – A bunch of crushed Oreo thins

    > *In saucepan over medium heat combine coconut milk, condensed coconut milk, cocoa powder, cornstarch, and oat milk. Heat & whisk constantly until mixture stiffens and forms defined peaks when you remove the whisk. Remove from heat and whisk in chocolate chips and vanilla. Pour filling into pre-baked pie crusts. Add crushed Oreos to the top around the edge. Cover with plastic wrap (so the wrap is touching the filling, this prevents a film from forming at the top), and refrigerate for at least 4 hours. I did mine overnight.*

    **Whipped Topping**
    – 2 cups plant based heavy whipping cream
    – 2 teaspoon vanilla
    – 1 tablespoon cornstarch

    > *Combine in bowl and beat with an electric beater until stiff peaks form. Before serving, layer on top of chilled pie. Add more crushed Oreos for garnish.*

  3. That’s a pretty pie, considering the storebought crust. I’m curious about this competition though, was it a workplace competition or something? Were there even any competing non-dairy pies? 😆
