Cupcakes

* 1 cup Fiber Gourmet flour

* 1 tbsp vital wheat gluten (optional-I didn’t have and didn’t use)

* ½ cup unsweetened applesauce

* ½ cup liquid egg whites

* 9 tsp brown sugar Splenda blend

* 1 tsp baking powder

* ½ tsp baking soda

* ½ tsp salt

* 3 tbsp cocoa powder (I used black)

* ½ tsp vanilla extract

* 3-4 tbsp unsweetened almond milk

Instructions

  1. Heat oven to 350°F (175°C).

  2. Add muffin liners to muffin tin

  3. Whisk dry ingredients very well.

  4. Mix applesauce, egg whites, almond milk.

  5. Combine wet and dry until smooth.

  6. Let batter sit 3 minutes

  7. I measured out approx 42grams in each muffin liner. It made 10.

  8. Bake 20 minutes, they are done when toothpick comes out clean.

Frosting

* 1 cup fat-free milk

* 1 small package sugar-free chocolate instant pudding mix (1 oz)

* 8 oz sugar-free cool whip, thawed (regular-sized tub)

* 1 tsp vanilla extract (optional)

Instructions

  1. In a medium-sized mixing bowl, whisk the milk and pudding mix until the mixture thickens.

  2. Add the vanilla extract and fold in the cool whip until blended. If it is a little lumpy, use a whisk to beat out any remaining lumps.

  3. Refrigerate for at least 30 minutes before frosting cake or cupcakes. It will thicken a little bit more as it chills.

  4. I piped out 16grams of frosting.

  5. Store remaining frosting in the refrigerator.

I came up with 36 calories per cupcake and 29 calories for the frosting for the servings I listed.

I adapted this cupcake recipe from a fellow redditor u/biguwumew, so thank you for the great base recipe. Made a few changes and think they turned out great for what they are.

I tried this recipe with monk fruit sweetener and didn’t like it. It was more doughy and had a funny smell plus didn’t taste great. (If you feel like trying it to save calories they used ⅓ cup + 1 tbsp Lakanto monk fruit). Tried again with the brown sugar Splenda blend and got much better results and not many more calories.

Only frost what you plan to eat immediately. Frosting will melt so store any extras in the fridge.
