High protein broccoli cheddar soup with 1/4 cup TVP fried up with spices for the topping. Very filling!! Found the recipe online:

Recipe:

  1. Sautee 1 onion and a cup of chopped carrots in a tablespoon of butter for 10 min. Add 1 teaspoon garlic

  2. Cover in 1/4 cup flour and 1 teaspoon paprika, mix thoroughly

  3. Add 3 cups broth and 4 cups broccoli florets, simmer for 10 minutes

  4. Add in 1 cup milk (I used soy milk)

  5. Add in 1 cup blended cottage cheese and 1 cup shredded cheese (I used low fat)

  6. With an immersion blender, blend as much as you want until you get the texture desired.

31g carbs, 9g fat, 20g protein

Vegan “bacon bits” :

1 cup of TVP, 1/2 tsp paprika, 1 teaspoon thyme and 1/2 teaspoon salt mix together and fry with a tablespoon of oil. Once browned, add in 3/4 cups broth or water and 2tsp soy sauce to hydrate and then cook until crispy. If you have 1/2 teaspoon of liquid smoke, throw that in too. I didn’t.

I used 1/4 cup for my topping
