    Filling

    5 TB butter, soft

    3/4 cup dark brown sugar

    1 tsp cinnamon

    2 TB cake flour

    Mix together until it forms a thick paste.
    Using a 0.38 oz scoop, portion small balls onto a parchment-lined sheet tray.
    Freeze until completely solid before assembling the cookies.

    Dough

    2 sticks butter, soft

    1/2 cup white sugar

    1 cup light brown sugar

    2 eggs

    1 TB vanilla

    3 3/4 cups cake flour

    1 tsp baking soda

    1 1/2 tsp baking powder

    1 tsp fine salt

    Cream butter and sugars until light and fluffy.

    Add eggs and vanilla and mix until smooth.

    Whisk together cake flour, baking soda, baking powder, and salt in a separate bowl.

    Add the dry ingredients to the mixer and mix until just combined.

    Cinnamon Glaze

    1 cup powdered sugar

    1/2 tsp cinnamon

    1 tsp vanilla

    2–3 TB water

    Whisk until smooth and pourable.

    Assembly & Baking

    Scoop the cookie dough using a 1.6 oz scoop.

    Flatten the dough in your hand. Place a frozen filling ball in the center.

    Wrap the dough around the filling, making sure the seams are fully sealed. Roll gently so the cookie is smooth and tight.

    Place on a lined sheet tray.

    Bake at 350°F for 12–15 minutes, until the edges are set and lightly golden.

    Cool slightly, then drizzle or spoon the cinnamon glaze over the cookies.

    Finish with a light sprinkle of cinnamon sugar over the glaze.
