Ingredients:

1 tablespoon avocado oil

2 pounds Brussels sprouts, trimmed and sliced thin

1 red onion, diced

1 pound ground pork

1 tablespoon gochujang

1/3 cup coconut aminos

dash of fish sauce, optional (you won’t taste it and it adds umami)

2 garlic cloves, minced

salt, to taste

MSG, to taste (optional)

rice vinegar, to taste

chili crisp (I like the Trader Joes brand that is onion forward)

4 eggs, cooked as you like

4 green onions, sliced thin

Instructions:

Add the oil to a hot pan and then add the onion. Cook for a couple of minutes to soften the onion and then add the Brussels sprouts and a pinch of salt. Cook, stirring occasionally over medium high heat until the sprouts are cooked to your liking (I aim for just tender with some resistance). Remove to a bowl and do not clean the pan. Add the pork, garlic, gochujang, coconut aminos, and fish sauce and cook over medium high heat, stirring constantly to break up the meat and cook until little to no liquid remains. Season to taste with salt, MSG (if using), and add a splash of vinegar. Serve with chili crisp, fried eggs, and green onions.
