  1. That beef doesn’t look very seasoned, it is “deconstructed” and you are supposed to use the flavors in those sauces or is it just deceiving me?

    I think I’d be more intrigued if the egg wasn’t cooked like that my favorite part of tartare is the raw yolk. Beautiful plating though and would absolutely devour. Also are those fried capers?

  3. The beef itself looks suspiciously like ground beef and not freshly diced beef, but perhaps it’s just been pressed and chilled. Slab o beef is definitely a choice for presentation
