Basically soaked the noodles in cold water for 1 hour, stir fry with some oil and sauces (soy sauce, vegan oyster sauce equivalent, mirin), add the chopped carrots and onions, then water and brown sugar, and then spinach (the video uses chives). After turning off the heat, I added in pan fried JUST Egg slices. Tastes legit to me!
