got a fancy new salad container to take to work so I can eat fancy salad. see action shot. really good and filling, 18g protein, 15g fiber, and 360 kcal. great micronutrient breakdown also! the root beer is for dessert 🙂

  • 1/2 bag (4.5 oz or 127 g) trader joe's chopped salad blend (escarole, endive, red cabbage, carrots, and radicchio)
  • 1 small (75g) avocado
  • 1/2 cup (85g) shelled edamame
  • 1 medium (90g) mandarin orange
  • 3 (70g) mini peppers
  • 2 oz (60g) sliced crimini mushrooms
  • 2 (14g) scallions
  • 3 tbsp skinnygirl asian sesame ginger dressing

was a little worried about the dressing as a lot of reviews complained about it being too acidic/not sweet, but I thought it was good for what it is! if you're used to super sweet dressings I could see not being into it, but I like sharp/intense flavors so it works for me. I also tried it on a similar salad mixed with some SF syrup which was also tasty, so if the idea is appealing but you want it more sweet that's an option too.
