Been super busy these past couple of weeks with work, plus my partner and I both came down with the flu.
Even with the tiring work schedule, I’m still *trying* to cook at home and meal-prep no matter how challenging it seems to be.
First photo is what I made for my bday – we have a super fancy dinner out planned this weekend, but since we were both sick as dogs this is what we had – Tini’s Homemade Mac and Cheese + Steaks. My partner had a Ribeye and I had a T-bone.
His was medium-well and mine medium-rare, as we like it! I loved the meal especially since I could barely stomach anything last week. My partner prefers my Gruyere Mac and Cheese recipe with breadcrumbs ~ I like both, just depends on my mood.
Photographs two and three are homemade chicken nuggets (so much better than Chick Fil A) + the leftover mac. It was incredible and my bestie asked for the recipe, easy to make too.
Photo four is *more* fried chicken, I know I’m not very healthy this week! I was craving wings, which I normally don’t bread and just bake + coat with sauce. I ended up doing a Southern fried chicken and it was awesome! Served with roasted potatoes. My partner and I were both OBSESSED!
Photograph five was a weeknight-dinner hit – Sheet Pan Smoked Sausage with Potatoes, Peppers, Onions, and Broccoli. I used Wright’s Cheddar-Jalapeño smoked sausage and it was killer. We both crushed this meal.
Photo six is super basic grilled chicken alfredo – it was good but heavy. I can tolerate alfredo like twice a year (mac and cheese is way better imo).
Final photo is my Red Velvet bday cake! I celebrated with family. My partner got me an amazing gift- the Ruffoni Copper Disney stock pot. It’s a work of art and looks incredible in my kitchen.
