My wife and I cooked for friends last weekend. The theme was Winter:

Grazing Plate – Bread chips, pickled beluga lentil/carrot/pear/kohlrabi, sprouted buckwheat, koji fermented root veggies, carrot and ginger pâte and cream cheese

Golden Beet – Slices, with pickled red beet and fermented cashew cream

Barley Risotto – mixed with parsnip-shallot purée and radicchio, poached pear and endive salad

Spiced Pineapple – with candied fennel salad, candied fennel seeds and olive oil semifreddo

It was absolutely incredible! Especially the koji veggies. I am looking forward to making more of those.
