I love tamarind and have been trying to experiment with it more in my cooking recently. This chicken was double fried orange ohicken style and then tossed in a tamarind glaze. My usual recipe for the chicken batter is just to froth the white from an egg and mix it with 2/3 of a cup of sparkling water, then whisk that into a dry mix of 1 cup of corn starch, 2 tbsp of flour, 1 tsp of baking powder and half a tsp of salt. I don't havw the exact ratios for the glaze as this was a first attempt and I was modifying it a lot throughout the process but it's a mix of clarified butter, rosemary, ginger, honey, soy sauce, tamarind puree, saffron water and corn starch. I think next time I might want to leave out the rosemary and add fennel.
