Served this at my food cart today – basmati rice and a fusion gumbo made with a mix of Cajun spices, tamarind, garam masala, kasoori methi along with Cajun Trinity, okra, and andouille sausage. Topped with some pickled onions and fried curry leaves. The roux was made with equal parts ghee and besan (chickpea flour).

  1. I never thought Kasoori methi and curry leaves can be a combination. Maybe it works out very well in real world
