I've known I wanted to make this for a long time, but have always chickened out. I made a standing rib roast for Christmas, and decided to go for it for Valentine's Day. Very happy with how it turned out. Not soggy at all. 100 percent will make again. I will work on a lighter touch with the scoring of the dough, and I will cut the finished BW all the way through- my dough pulled off. And less Kerry Gold in the mash.
I'd say it was a standard recipe and process. No crepes. Dough (Pillsbury sheet), Prosciutto, Duxelles, center cut tenderloin. Did not need a knife on the plate, so tender.
