This traditional dish is made with raw rice, de-seeded tomatoes, diced onions and seasoned with parsley, oregano, thyme and lemon. After stuffing the zucchini, place them upright in a big tall pan, cover with water and let it cook until the rice is done. Our host made a few with peppers too.

  2. I am half Egyptian. I ordered this in a restaurant in Egypt once… It also came with guts filled with rice. 🤮

It’s very hard to specify for native Egyptians what “vegetarian” is, despite the Arabic word “nabatiya”. When you explain that you don’t eat “meat”, they offer you chicken or fish, because that’s not considered (the same as) meat. Vegetarianism is almost nonexistent there; eating meat is the default for everyone.

So now I’m explaining it like “I’m not eating anything carrying a soul”. Then you’re offered rice-filled guts.. 🥲
