


I tried the new animal-free egg white powder (9 grams of protein, 40 cal per 2 Tbsp). It’s the same protein (albumen) as in eggs, but it’s made from precision fermentation. It’s 10/10. Bakes just like I remember (meringues in right pic).

You can add the powder directly to smoothies, oatmeal, or whatever. It has a neutral flavor just like animal egg white because it’s the same protein. Yesterday I made a fantastic angel food cake. Would you recommend using it with boxed mixes or recipes that call for egg? Would it function similar to a flax egg in something like brownies or muffins?
This is interesting. How much was it? Looks like a really long shelf life so even if it’s pricy at least it will last

I bought this and was really bummed – attempted to recreate Vegan Proteins angel food cake recipe (she used this to make it and hers turned out perfect) – it was a flat sugary sweet mess. Still looking for an angel food cake recipe these will work with.
wow cool! i wonder if this kind of fermentation technique could be used for medicine/whatever they use egg proteins for to make vaccines. one can hope

Im confused! How can it be animal free but still contain real egg? How does the fermentation work? I looked on their website but can’t find any further info on the science

i tend to whip up just a serving or two of sweets at a time— how many meringues would you say one serving of the powder yields?
How would this do in something like macarons? I would love to bake some of my favorite recipes that call for egg whites again that I had to say goodbye to when I went vegan.
