
If you’re looking for a lighter, veggie-forward comfort meal, these Three Cheese Zucchini Rollatini are a great option. Thin zucchini slices are rolled up with a creamy three-cheese filling, baked in tomato sauce, and finished with melted mozzarella on top. They’re flavorful, simple to make, and work well as a meatless main or side dish.
Ingredients
- 3–4 medium to large zucchinis (enough for ~30 thin slices)
- 1½ cups tomato sauce
- ⅔ cup ricotta cheese
- ½ cup parmesan cheese (divided)
- ⅔ cup mozzarella cheese
- 1 egg
- 3 tbsp fresh basil, chopped
- 2 tsp fresh oregano, chopped
- 2 garlic cloves, minced
- ¼ tsp salt
- ¼ tsp black pepper
Steps
- Prepare the zucchini Slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). Lightly salt them and let rest for 5 minutes to draw out excess moisture.
- Make the filling In a bowl, mix ricotta, ¼ cup parmesan, basil, oregano, garlic, egg, salt, and black pepper until well combined.
- Prepare the baking dish Spread about ½ cup tomato sauce evenly on the bottom of a baking or casserole dish.
- Assemble the rollatini Overlap two zucchini slices to form a wider strip. Spread about 1 tablespoon of the ricotta mixture on top, then roll up and place seam-side down in the dish. Repeat with remaining zucchini and filling.
- Top and bake Spoon a little tomato sauce over each rollatini, then top with mozzarella and remaining parmesan. Bake uncovered at 375°F (190°C) for 25–30 minutes, until the cheese is bubbly and lightly golden.
