My colleague promised to lend me their Ninja Creami but they forgot to bring to the office on Friday, in my mind I was already hyped up for an ice cream treat over the weekend, so ​I ended up making these frozen protein slabs.

You can obviously tweak the amounts to fit your own macros, but here is what I used for this batch: makes 4 mini waffle slabs.

​35g protein powder (I used a chocolate coconut flavour whey)

​5g cocoa powder

​30ml unsweetened soy milk

​40g peanut butter

​150g low fat cottage cheese (I know it's an odd choice but it fits my goal lol)

​I folded it all together and then used a hand mixer to blend the hell out of it until the cottage cheese was smooth.

​The first time I tried this, I used a standard chocolate bar mould (the second photo, speculoos flavour). It froze into a solid block and was too hard to bite into straight out of the freezer, so I had to wait for it to soften. I should have made the slab thinner. I then switched to a waffle mould for the next batch and it solved the problem. Because of the shape, the frozen slab is still easy to bite into instead of being a thick hard slab.

​I had the chocolate one on a slice of keto bread like a makeshift ice cream sandwich. It was glorious. I generally like earthy flavours, so this really worked for me.
