I was in this thread talking about preparing for Ramadan and learned of a few very tasty recipes from other countries that I would have never have heard of anywhere else, so I wanted to start this thread for vegan dishes from around the world or dishes that can easily be made vegan.

I'll start with a couple I've learned:

Mujadara from Lebanon: rice and lentils with crispy onions

Koresh Gheymeh: Persian dish with yellow split peas and a tangy lime tomato sauce with roasted potatoes. Just use TVP or vegan ground beef to veganize. (Can use store bought french fries if you don't feel like making potatoes), pairs amazing with tahdig (crispy rice)
