Freeze ur baked sweet potatoes!! I cut them into cubes/circles, sprinkle some salt and brown sugar replacement, the bake until they caramelize, then pop them into the freezer after they’ve cooled. I usually freeze for about 4ish hours, but I’m trying them overnight tomorrow morning. They genuinely taste delicious and the texture is wonderful. I’ve never seen anyone else try this but I did find this link if it’s more helpful lol

I also must add I’m a sweet potato fein and eat pretty clean so that could explain the obsession my apologies if it’s not as amazing as I’m making it sound… but it seriously is like a little fudge desert. I once even played around adding sugar free syrup and PB powder as “seasoning” and holy crap.
