From the cartilage to the bone and skin.. a giant mound of flesh soaking in hot liquid, I wouldn’t be able to eat this without gagging. Just a personal preference.

That’s chicken stock. You have the start of a soup. Strain it, and make a delicious soup with that base.

I’m surprised people are so focused on the chicken pieces. It’s very normal to me. After cooking in the broth the meat comes off the bone pretty easily.
I mean, I’m fine with a more shredded chicken soup too, but this also works.

No bueno, boiled chicken with massive fat is fine but here are some things to do differently:
1) roast the chicken beforehand, cut the meat off of it save the drippings in the carcass toss all of that with a small amount of crappy meat into the pot and cook with the savories on a very low temp
2) strain the liquid, and remove most of the fat
3) slowly reheat the chicken at a low temp, cook some fresh veggies in the liquid, serve with the meat
