










The new learning point from this bread:
The general formula I am using for quick breads is:
- Equal parts liquid thing (banana, sweet potato, etc) and flour
- Sugar = add-ins (eg sprinkles, coconut) = 1/2 of the flour
- Oil = 1/4 flour
- 1 tsp of baking powder per cup of flour
If the โliquid thingโ is dryer, like sweet potato, then it gets more oil but also needs more baking powder.
So for this one I used 1/4 cup of sweet potato, 1/4 cup of flour, 1/8 cup of sugar, 1/8 cup of sprinkles, 1.5 tbsp of oil, 1/2 tsp of baking powder and a bit of cinnamon.
Mix that all and bake it at 350 F for 30 minutes.
