  1. Looks great, as a home chef chasing that dragon for the perfect Mongolian beef.

    Higher heat, try to get a harder sear and more color on both the beef and veg.

    Velvetting the beef increases the pH. So it should sear more than normal, make sure you do that for this style of cheese cooking.
