An astounding dinner at Kadeau in Copenhagen. A top meal in a lifetime of good eating. Clear flavors, wonderful new combinations, perfect seafood, varied preservation methods pulling out new flavors. Impeccable. Could not be improved upon. No notes. I am going to Noma tonight and honestly I cannot imagine it could be better.

The wine pairing was superb too although I asked for 2 changes. they worked a sake in, and replaced my dessert wine with the Chateau D'Yquem from the next tier up.

A couple of interesting points that stood out: flavor combinations were super clear. like the squid had shiso and also raw walnuts and also was atop a thick nutty liquid base. you could pick out the flavors together but then the liquid at the bottom eaten alone tasted like it would overwhelm the rest; but it didn't.

they used thin shaved raw nuts to great effect for flavor and texture. new to me. particularly amazing when they alternated thin raw chestnut with scallop. it created an amazing texture when biting that in no way fell apart.

the preservation methods were all over the map and brilliant. I particularly loved the 9 preservesd bites that came with the duck. .

    Having been there 10 times now, Kadeau has really grown on me. The first 2 times, I wasn’t impressed, so it took me a few years before I decided to go back, but then I was blown away two times in a row. I definitely prefer the preservation menu over the growing season, though the growing menu also has some highlights.
    I’m going back next month to have the same menu you had, really looking forward to it.

  3. Lovely meal. The walnut tart, smoked salmon, and preserves were all very memorable and I’m glad you got to try them too. It sounds like the hospitality continues to be fantastic too: they pulled out the last of a housemade strawberry schnapps for us.
