Top left: scrambled “tamagoyaki” eggs, basically added some dashi powder, sugar, soy sauce, and mirin to 2 eggs and cooked it scramble-style with butter

top right: garlic bok choy, blanched the bok choy for ~1 min, then stir fried with a bit of oil and garlic

bottom right: miso mushrooms, cooked the mushrooms in a pan until most water was gone then added miso, sake, soy sauce, and butter and reduced that into a sauce

bottom left: roasted Japanese sweet potato, just baked at 400F for 1 hr

I do use oil/butter in my cooking but still ended up around 400 cals for the plate and it was filling and delicious. Hope this gives some new ideas to people
