  1. I’m allergic to tomatoes but found out not tomatillos. I’ve had to cut out a lot of Mexican foods and have wanted to try something like this for awhile.

    I used this recipehttps://thatsdeelicious.com/green-enchiladas-with-chicken/ as the base, but made a couple of amendments.

    I used jarred sauce, and in the filling I used onion and green capsicum/pepper as green chillies are hard to get here and it would be too hot for me anyway.

    Served with cilantro lime rice. It was really yummy! And best thing was that all the ingredients needed to be used up from my freezer or pantry!
