“Smashed Breakfast” – a high protein breakfast for vegetarians (especially good for gym-goers)
From bottom to top:
– 2 slices of villagio multigrain bread (5g protein)
– 12 leaves of Spinach (approx 2g protein)
– 1 avocado mashed into guacamole with 3 gloves garlic, salt, pepper, lime and lemon juice, dash chili powder (3g protein)
– 3 large eggs, boiled and mashed with vegan butter and ground pepper (18g protein)
– half a tomato and quarter onion, diced (less than 1g protein but good source of fibres)
– 2 tbls shredded vegetarian cheese or use feta (2-4g protein)
– top with fresh herb such as parsley or dill!
Easy, delicious and healthy way to start your day. Takes 20 minutes to make, starting with boiling your eggs and making guac. Highly recommend feta though as it tastes better, has more vegetarian alternative options, was more affordable and slightly higher protein!
