
Method:
-Chop scallions seperating white and green.
-Slice 1 pack of 8oz mushrooms.
-Heat large sauce pan to medium heat (5/10) and melt 1tbsp of butter.
-Add chopped white scallions and 1tbsp of minced garlic to butter, increase temp to medium high (7/10) and stir until garlic browns.
-Add mushrooms to sauce pan, keeping 7/10 heat and cook until browned.
-Add one pint (473ml) of heavy cream and 375ml of sherry cooking wine to sauce pan.
-Bring to simmer (10/10) heat and stir occasionally.
-While sauce is simmering, cut chicken breast into strips and salt pepper them.
-Cook chicken in seperate sauce pan until browned.
-Make pasta of choice (SALT THE WATER YOU HEATHENS)
-At some point sauce will reduce and change color from white to dark brown and thicken. Remove from heat immediately and stir. It will thicken as it cools.
-Plate pasta, chicken, add sauce and garnish with scallion greens.

Looks mighty fine to me
Sorry, unsauced pasta is detracting from the dish. You’ve gone to the trouble of making a sauce. So just mix your pasta in it before plating.
