As it has now become a holiday tradition in my friends group, we got together yesterday for a big, boogee celebration and I prepared an 8 course caviar tasting menu that I curated and tinkered with for a while!

It’s obviously a little much, but what are the holidays if you can’t go all out with friends and family, right?

Menu:

  1. Deviled eggs

  2. Sicilian crudo inspired by Swan Oyster Depot in San Francisco

  3. Chawanmushi with shrimps and scallops

  4. Snow crab toast, bisque sauce

  5. Beef tartare, gochujang mayo, fried perilla leaf

  6. Chicken nuggets.

  7. Pasta al limone

  8. Miso creme brulée, vanilla ice cream

    It all looks excellent, and a great idea for a holiday party.

    I’m assuming, since you’ve obviously dabbled quite a bit, that you have a preferred caviar? I want to remake a dish I had at Aquavit in Manhattan but I’m a novice in this area so any recommendations would be greatly appreciated.
