Finally perfected the prime rib cook. 30 day dry age, 48h dry salt brine, 180F oven until 123F internal, 90m rest which reached 131F, 10m in 550 convection oven, slice and serve. 12/10

    That looks stunning! What a wonderful Christmas dinner. The yorkshire pudding is one of my favorites I rarely make, only used a muffin tin but traveling this year and don’t have one, I might just try it in a pan that just might be the way to go!
