    # Ingredients

    * 4 chicken thighs, bone-in skin-on
    * 3 cloves garlic, minced
    * 2 tbsp light soy sauce
    * 1 tbsp oyster sauce
    * 2 tbsp hoisin sauce
    * 2 tbsp shaoxing wine
    * 1 tbsp brown sugar
    * ½ tsp Chinese five-spice powder
    * a few drops of red food coloring, optional, add as needed

    # Instructions

    **1. Make the marinade.** Stir all marinade ingredients in a bowl until smooth and the sugar is dissolved.

    **2. Marinate the chicken.** Add chicken thighs and coat well. Cover and chill for at least 4 hours or overnight.

    **3. Bring to room temp.** Let the marinated chicken sit out for 15 minutes before cooking.

    **4. Cook the chicken.** Grill over low heat, skin-side down first, flipping occasionally until caramelized. Or roast at 180°C (350°F), flipping halfway. Broil 1–2 minutes at the end for extra color.

    **5. Slice and serve.** Rest the chicken for 5 minutes, then slice and serve warm.
