
Hobby chef here, was wondering if some more experienced chefs here could determine whether my venison steak is raw or just between medium rare and rare? The middle was warm, and I still ended up eating it and it was delicious, but it seemed more red than I’m used to (it was also much thicker than used to).

You undercooked game meat specifically? Just add a glass of lake water to the meal so the worms have company.

You should be temp probing it.
Venison is like chicken, in that it does not taste better when it’s rare or medium rare. It gets its flavor and texture from being cooked through.
