All of the ingredients are things I used in prior dinners, or parts of prior dinners.
The main is an open-faced steak sandwich with roasted red bell peppers, caramelized red onion, shiitake mushroom, and wagyu steak topped with a homemade Caesar dressing. The sandwich is a dupe for a steak sandwich I used to buy when I lived in San Diego, and that restaurant doesn’t make it anymore—this is as close as I have gotten to re-creating the original, and it taste amazing!
The side is brussels sprouts. I roasted Brussels sprouts with garlic and balsamic vinaigrette over the weekend to accompany the first round of Wagyu steak. The leftovers got put in the cast-iron pan and sautéed for a double cook. Honestly, I think they taste better this time around.
The sweet treat is a chocolate chip shortbread cookie topped with flaky sea salt. I also made these over the weekend and had a couple laying around, so I thought it would go nicely with this plate.
If you’ve never used Caesar dressing as a topping for steak, highly recommend. Happy to share the cookie recipe, if anyone wants it.
