These epic steak rolls make use of my new Roma tomato recipe.
The tomatos get a splash of olive oil, balsamic, salt and pepper, 2 whole cloves of garlic (peeled), wrapped in foil and thrown in the air fryer for 20min. Be sure to wrap carefully in a way that you can easily unwrap and control the liquid! 👾
While that is going, dry the excess liquid from the steak, add conola/sunflower oil (the meat browns better), balsamic, a pinch of sugar, a dab of Worcestershire, cover with a fair amount of cracked black pepper and a little coarse sea salt (be careful not to over salt).
Fry the meat on high, pressing it firmly into the pan and placing pieces one by one, allowing the meat to cook most of the way on one side before grabbing a spatula for the last bit. Once all sides are brown, turn down the heat and add one clove grated/minced garlic. Cook briefly until aromatic then turn off the heat. It’s okay if the meat is still pink, it will continue to cook. You can of course cook the steak how you wish!
For assembly, using one half of the roll, mop up some sauce from the pan (salty), mash the garlic cloves and tomato with a fork (sweet) and spread along the bottom. Break up some rocket. I experimented with kewpie on one half, it was unnecessary. Add your meat. Finish with a couple more teaspoons of that delightful tomato garlic sauce.

Edit: does anyone have any ideas for the leftover sauce? I was thinking of adding it to a Bolognese! Enjoy ❤️
