
Ingredients:
Potatoes,
Green Chillies,
Coriander,
Curry Leaves,
Ginger,
Mustard seeds,
Cumin seeds,
Turmeric powder,
Gram flour,
Rice flour,
Baking soda,
salt,
Oil,
Hing or Asafoetida,
Garlic cloves
How to make batata vada: step by step process is as follows:
Take 500 gms Potatoes and wash to clean it
Add the potatoes in pressure cooker or instant pot
Boiled potatoes in pressure cooker – 4-5 whistles
Boiled potatoes in instant pot – high pressure 5 mins
Peel of the potatoes and cut into big pieces
Keep aside the boiled potatoes
Heat a pan
Add 3-4 tablespoons oil
add mustard seeds and wait until it splutters
add cumin seeds and wait until it splutters
Add curry leaves, finely chopped green chillies, chopped garlic, grated ginger, hing or Asafoetida and turmeric powder
Add the boiled potatoes
Salt as per taste
Garnish with coriander
Stir fry
Turn of the gas or heat
Mash the boiled potatoes stuffing
Make balls or vada
Mix 1 cup gram flour and 1/3 cup rice flour
Add salt, turmeric powder, red chili powder, ajwain seeds, baking soda
Add little water and mix the batter
Add water to adjust consistency
There shoul be no lumps in the batter
Batter should be not be too thick it should be running or flowing
Cover and keep aside for 5 mins
Heat a pan
Add oil for deep frying
For checking the prefect temperature of oil add a small drop of batter in the oil. The small drop of batter comes to surface
Then Dip the vada or round shape aloo stuffing into the batter and place in the oil
Deep fry the vada or aloo bonda
Flip the sides
Remove on napkin or tissue paper. Tap gently to remove the extra oil
Fry some green chilli
Serve with batata vada with pav or bread, green chillies or mirchi and chutney
