Roasted the chicken on a rack over the veggies, to get juices and fat all over them. Decided to shred it, instead of carving it, because I was tired and hungry.
Mashed potatoes were made using schmaltz from the chicken instead of butter, and I simmered and mashed an entire bulb of garlic with it.
The real standout was the gravy. Made with homemade chicken stock, apple cider, schmaltz, butter, shallots, and the pan drippings. Silky smooth after being strained and emulsified with the butter, and the roast drippings, especially because of the beets, gave it an amazing sweetness.
